Ingredients You Need
1/4 cup mango chutney, large pieces of mango chopped
3 tablespoons light or regular mayonnaise
1 teaspoon curry powder
2 cups diced cooked chicken or turkey
1/3 cup sliced Lindsay® Ripe Pitted Olives
1/4 cup slivered almonds, toasted (optional)
4 whole wheat or white pita bread rounds
8 Boston or red leaf lettuce leaves
1. In a medium bowl, combine chutney, mayonnaise and curry powder; mix well.
2. Add chicken, olives, and if desired, almonds; mix well.
3. Cut each pita bread in half; open into pockets.
4. Line pockets with lettuce; fill with chicken salad.
